One of the key ingredients used to make traditional Japanese crystal candy (Kohakutou) is agar agar.

Agar agar is a natural plant-based gelling agent derived from red seaweed, which is harvested from ocean environments around the world. Unlike gelatine, agar agar is completely vegan, making it a fantastic ingredient for creating the unique texture that crystal candy is famous for.

It's this incredible ingredient that helps us create the signature Bak'd experience:
